So it may seem like an oxymoron, a very unhealthy baking blog, doing a gluten free banana bread that is free of refined sugar and grain free. Since I have been pregnant (going on 17 weeks now) my eating habits have slowly started changing. We are very healthy eaters as it is, and try to keep our diet free from breads and sugars, but in the first trimester of my pregnancy carbs were one of the few things I was able to stomach. And the difference in the way it made my body feel was astounding. I was so much more tired all the time, my body was never energized, and I never felt well fed. Since I have gotten into the second trimester I have started eating as we did before, and have felt much better.
That being said, I have decided to take my blog on a slow different path. Now I cannot guarantee that it is will always be this way, but I am going to try my hardest to make healthy delicious desserts that you can have, and be fully satisfied yet not feel guilty about. Ones that benefit your body, and not compromise it. One that everyone, including people who cannot eat gluten can have. Since growing a sweet child inside me, I have been much more conscious of what I put into my body. Which is ironic because you think I would care about my own body and do the same, even when I was not pregnant, but now it seems to be more magnified and makes me more aware that if I would not feel my precious child something, then I should indeed not eat it either.
Our little one is growing and starting to make it's appearance!! We could not be more excited!
My hope is that everyone that reads my blog, or follows it will be inspired as well to treat their families and guests with these tasty desserts without having to count calories and feel tired from all the sugar afterward. Now as we know, I am one that absolutely loves desserts, hence the dessert blog, and I can attest that this banana bread is absolutely amazing. I cannot believe that it have no sugar or flour in it. I like it best cold, not warmed like traditional banana bread. What I love about it most though is knowing that me, my husband, the baby inside me, my little nephews and everyone else who eats it is getting nutrients that do not compromise your body or do harm to it.
Grain Free Banana Bread
makes one standard loaf
adapted from Meaningful Eats
for the bread:
6 eggs
1/3 cup coconut milk or regular milk
1/2 cup honey
1 teaspoon vanilla extract
1/4 coconut oil, melted or unsalted butter
3/4 cup coconut flour
1/2 cup almond flour
1 1/2 teaspoons cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
3 ripe, mashed bananas (about 1 cup)
Preheat oven to 350ยบ F. and adjust the rack to the middle position. Grease your loaf pan.
Place all ingredients in the bowl of a food processor, or blender, and process until smooth.
Bake for 40-55 minutes until a toothpick inserted into the center of the loaf comes out clean. Cool in the pan for 10 minutes. Turn out onto rack and cool completely.
Keep refrigerated and enjoy!

Can you substitute the coconut flour for just more almond flour for someone with a coconut allergy?
I have not messed around with coconut flour enough to know. I think coconut flour is essential to add density to grain free breads but I am sure if you looked online for substitutions for coconut flour, there must be some option for those with coconut allergies!
I just found your blog on Pinterest. The recipe that caught my eye was the rustic macarons which, like you, I waited forever to try to make. Now I don't make them often because I end up eating them all. I just can't stop. Anyway, I was going to pass up following your blog because I am gluten/grain free but then I found your grain free banana bread! Yeah! I've been gluten free for years but only grain free for about 5 months. Haven't made any breads yet but I'm going to try this one. Thanks for posting!
