Marathon Cookies

I decided to go against the grain of my usual sugar-packed desserts for a few reasons. 1) Me and Kyle decided to not eat ANY sweets from September 1st until our Newport Beach trip, which is September 26th. Let me tell you, that is a long long period of time for no sweets at all. So I had to at least make a teaser sugar-free dessert to help us last. 2) One of my best friends, Gina, is running in the PF Chang's half marathon come January, so I decided to make a healthy snack in her honor. 
Gina is one of those amazing people who have a passion for helping others out. While training for this run, she is also working with a organization called Miracles in Motion through The Phoenix Children's Hospital. She is assigned a child who is a patient at the Phoenix Children's Hospital (PCH), and if you are unfamiliar with PCH, it is known for their cancer center on site for children. They do incredible things over there and they give each child they work with the chance of life and hope. This is one way that they are doing so. Gina's goal is to raise $1,500 to help out a child there. She gets to meet him or her this month, as well as gets to be greeted by him or her at the finish line to her race. Talk about an amazing opportunity to take the focus off running the race for you, and running it for a child in need. Back to the cookies for my little runner, Gina. I searched countless sugar-free recipes to try, but I wanted it to also be packed with "good for you" food. I don't want to appear that we are unhealthy eaters in this household. We basically live off of quinoa, veggies, fruit, and chicken, but we also love our desserts. It actually has kind of been fun searching deep into the blogger world to find sugar-free desserts. There is many more sugar filled desserts then not, so I definitely found that as a challenge this week. First I want to make it clear that almost NO dessert is completely sugar-free. If you are looking for a sugar-free dessert, cracker, or cookie, I would search online for a recipe before going to your grocery store to search. I say this because packaged products, that claim sugar-free deliciousness, are typically higher in fat to compensate for the flavor loss. So I would try to make it yourself if you can. When I say sugar-free, I mean refined sugar-free. So there is no added refined sugar in this recipe.  The original recipe for this cookie had oil (which I subbed for all natural peanut butter) and had very little added fun stuff. I will warn that they are not your typical chocolate chip cookie, but man if you are not aloud to eat sugar, these most definitely suffice. 

Since we are eating no sugar, this will most likely be my only post until Newport. I am planning on making  Smore's that consist of homemade graham crackers, homemade marshmallow fluff, dipped in chocolate. Delicious? Yes. I will also be making my chocolate loaf cake! Until then, have a wonderful September! 

Marathon Cookies
yeilds 12 cookies

for the cookie:
1 1/2 cups oats
3/4 cups all purpose flour (or whole wheat flour)
3/4 tsp. cinnamon
1/4 tsp baking soda
dash of salt
1/4 teaspoon vanilla extract
2 tablespoons flax seed
3/4 of a large, ripe banana, mashed
1/2 cup peeled, diced apples
1/2 cup craisans
1/4 cup unsweetened coconut
1/2 cup honey
1/4 cup all natural creamy peanut butter
dash of milk

Preheat oven to 375ยบ F.

In a large bowl milk all ingredients, except for the honey, peanut butter, and milk. Mix until combined. In a microwave safe bowl, microwave the honey and peanut butter until just warm. This will help it combine better. Add to the mixture and stir until combined. If mixture is too dry, add a dash of milk.

On a cookie sheet lined with parchment paper or a silicone pad, spoon the mixture onto the cookie shoot with 3/4 inch in-between each cookie. Lightly pat down each cookie so it is in a circular shape.

Bake for 10-12 minutes until the tops are lightly browned. Take out and let cool on pan.

for the honey drizzle:
1 tablespoon unsalted butter
2 tablespoons honey
dash of vanilla extract
1/2 cup raw almonds, chopped

In a microwavable bowl, mix the butter and honey. Microwave for 5 seconds at a time until the butter is melted and combined with honey. Add the vanilla and stir.

Drizzle over the cookies, and add a few chopped almonds on each cookie.

Wow these look delish! I think I will try these with almond flour this week to work for my SCD Diet! I will let you know how they turn out, in fact maybe I will make them and we can have them on friday!

Just made these B!! They are delicious and easy to make! I also added some carrots because they needed to be used and I love them in there!!

are they quick oats or rolled oats?

I used quaker oats, so it would technically be quick oats, but either should work!
