Grain Free Banana Bread

So it may seem like an oxymoron, a very unhealthy baking blog, doing a gluten free banana bread that is free of refined sugar and grain free. Since I have been pregnant (going on 17 weeks now) my eating habits have slowly started changing. We are very healthy eaters as it is, and try to keep our diet free from breads and sugars, but in the first trimester of my pregnancy carbs were one of the few things I was able to stomach. And the difference in the way it made my body feel was astounding. I was so much more tired all the time, my body was never energized, and I never felt well fed. Since I have gotten into the second trimester I have started eating as we did before, and have felt much better. 

Blueberry Lemon Poppyseed Cake

Since last time we all talked, a lot has changed in our small little family. In the beginning of November we moved into our adorable new little home! We could not be more excited to be living where we are and are so blessed through it all! Our new house is about 5 minutes from my parents house and about 20 feet (across the street) from my sister, her husband, and our two nephews! So it has been quite the fun adventure around here! 

Pumpkin Cheesecake

Well that took much longer then usual to get this recipe up on the blog! We weren't able to get "professional" looking pictures of the cheesecake due to the fact that it was for a party we were hosting, and it was night! My sweet hubby had a wine and cheese party for all his clients as a launch of his new business! Of course me and my mom took every opportunity we could to make the food! We had tons of bruschetta, bread, cheese, appetizers, wine, and of course the desserts! It was a great night spent with great friends, and I am so thankful that the Lord has blessed him with this incredible business that is filled with friends that we will have for a lifetime! 

Banana Cake for Two

Now I must say, please do not judge my photograph! My sweet husband has been working so hard for his new business that I had to take one for the team and photograph this cake. And I must say I have a new appreciation for when my husband takes pictures for me! It is much harder then it looks! I tried every angle, lighting, backdrop possible and it just seemed to be a dud. So please forgive the horrendous pictures and just focus on a delicious little banana cake for two! 

Coconut Ice Cream Sandwhiches

Well, I think it is safe to say that I have not only fully abandoned my blog, but I have completely abandoned the blogging world! I feel as though this happens more times then not with me and our lifestyle! Since my last post, which I sadly say was all the way back in April, a lot of things have changed for our little family! I was promoted at my job in Scottsdale, which not only now means commuting an hour there and back five days a week oppose to two, but I am also working full time there now! I love it so much and wouldn't change my lifestyle right now, but that does mean less baking! Which makes for one sad little baker. My sweet husband has started his own business as an independent trainer, called Wood Fitness. He has put in many hours, and many long days to make this work, so we are very very proud of him! As funny as it is, my last post announced our new move, and so does this one. With the hours we work, it seemed so silly to pay rent on a house we were never in, so we are now moved into my parents basement. As I say that out loud it sounds so cliche that someone would be living in their parents basement, but I am so blessed to be there. Let me explain that my parents "basement" is actually more like a second house that has two full sized rooms, a bathroom, a half kitchen, and a large living room! So it feels like our own house. We are so blessed that they have taken us in and cannot wait to be here for the next few months while we decide where we want to live, and what direction our life is going! This also means being much closer to our sweet nephews, and I cannot complain about that!

Coconut Cream Pie

I don't know how, and I certainly have no idea why, but I have never tried coconut cream pie before. Maybe because I am more of a cobbler gal, but man do I feel like I have missed out the last 20 years of my life. I am obsessed with coconut, especially during the summer, and this recipe has now become on of my staples. It is perfect for summer because you keep it in the refrigerator, so you do not have to worry about it melting, or going bad. It also is nice and refreshing when it is cold like that.
